Easy Falafel Recipe

Falafel Is one of those things that I forget about. It’s so good and widely available I just take it for granted. When I was younger I used to buy it regularly at the supermarket or high street food place in a wrap for my lunch. Never realising just how easy it was to make and how much better homemade food was. This easy falafel recipe won’t take long and is utterly delicious.

Great in pita’s as an appetiser or in a large salad, make a double quantity and freeze for a quick bite later in the week.

Easy Falafel Recipe
Ingredients
  • 2 cans of chickpeas
  • 4 cloves garlic
  • handful of chopped coriander
  • 3 shallots (or 1 diced small onion)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 150 g oats
  • 1 tbsp oil plus a bit more for coating baking tray
  • salt and pepper to taste

Prep >20 mins Cook> 20 min

Preheat the oven to 200 C or 180 C for a fan oven.

Add all the ingredients to a food processor and blitz until a chunky mix is formed, not too smooth but just smooth enough to make patties out of.

Line a tray with baking paper and a little oil.

Take just over a tablespoons worth of mix and form into patties, should make around 20. Add these to the tray and place into oven, turning after 10 minutes to ensure both sides have a golden brown colour.

Remove from the oven and serve with salad, pita’s and Greek yoghurt. Enjoy this super easy falafel recipe!
