Brunch – Overnight Oats

Overnight Oats Recipe

I tried an overnight oats /chia pudding at one of my favourite places to get brunch and wanted to have a go at replicating it. I have frequently made this overnight oats recipe for breakfast as it’s quick, makes mornings easy and delicious.

This recipe is packed with lots of ingredients known for their health benefits to the body. Chia seeds as a source of protein, fibre and omega-3 fatty acids. Raw cacao powder for magnesium, iron and calcium. Sunflower seeds for B vitamins and other minerals. Cinnamon for its antioxidants and ability to help stabilize blood sugar levels. And obviously, the oats are fibre-rich and high in antioxidants.

All in all this overnight oats recipe is a super breakfast that will set you up for the day and leave you satisfied until lunch.

Overnight Oats Recipe

Ingredients

  • 200g Rolled oats, I like to use organic if I can
  • 2 tbsp Raw Cacao
  • 1 tsp Cinnamon
  • 4 tbsp chia seeds
  • 200ml coconut milk or normal milk if you prefer

Prep >10 mins & Leave to soak overnight

This is a super easy one, add all the ingredients into one bowl, mix cover and leave overnight.

The next morning you can add yoghurt, extra milk or compote. I sometimes add peanut butter, which is super delicious.
